Apples apples everywhere….

Autumn is now well underway and the abundance of apples confirms it. This year my Dad harvested 50lbs of apples from the trees in his garden. All shapes and sizes, colour and sweetness. Autumn apples can be quite tart, especially if grown in the UK so I think cooked apples are the best.

I think the apple and blackberry bakewell cake I made a couple of weeks ago was perfect but I wanted to try something else.

I love this Apple Cake, it was really simple to make, cooked slowly and still lovely and sticky on top.

225g butter, 225g light muscovado sugar, 4 eggs, 225g of self-raising flour, 2tsp ground cinnamon, half a tsp of ground nutmeg, 85g of sultanas, 3-4 apples. Cooked at 180C for 1 hour. Brushed with warmed honey for a sticky glaze.

Bakewell pudding with autumn fruits

It’s the first week of September already! Payday, sunshine, a 4 day week at work following the August bank holiday, shopping for Autumn clothes and finding some sales are still on, good food and a cheeky drink or two.

For some this week is a tipping point, the Summer may be revived and more sunshine might be ahead or the temperatures might tumble and push us deep into Autumn. The leaves are changing colours already and the apple trees are laden with fruit. I received my first home grown apples from a friend last week and I loved making this pudding which combines the classic summer picnic treat of bakewell tart with the sweet and tart taste of apples and blackberries.

The recipe says it makes 6 servings but it would have fed 8 easily. The cake topping was well risen and very light and delicate against the fruit filling. I wish I had some single cream but custard did the job.

When we moved into our home our living room was the same colour as this pudding.  I think the colours in this photo look really vibrant and enticing…….. for a pudding anyway….
